Tongue & Cheek Announces Summer Series Kitchen Collab Featuring Chefs From New Orleans

Miami Beach’s award-winning neighborhood restaurant, Tongue & Cheek, is gearing up for its second annual Kitchen Collab “Summer Series” with a focus on New Orleans’ ever-evolving culinary landscape. Chef/owner Jamie DeRosa’s will open his kitchen to some of the town’s top toques to highlight why so many are taking notice of the Crescent City.
 
First at the line is James Beard-nominated chef Slade Rushing of Brennans, one of the French Quarter’s oldest institutions. Steeped in the broad range of southern culinary tradition, Rushing interprets classic New Orleans favorites with a lighter hand and contemporary precision. His menu offerings reveal a reverence for the French, Spanish, and Italian influence on New Orleans cuisine, and a recognition of more recently arrived flavors and techniques -- such as Vietnamese -- all enhanced by the highest regard for the fresh and the local.
                                   
In August, guests will revel in the cuisine of Justin Devillier, chef/owner of La Petit Grocery where he puts his creative spin on traditional NOLA cuisine with dishes like Turtle Bolognese and Blue Crab Beignets. Devillier has been named a James Beard Award finalist for Best Chef: South in 2012, 2013, 2014 and 2015, and was also named 2014’s “Chef of the Year” by New Orleans Magazine. Devillier’s second restaurant, named Balise after the first French settlement at the mouth of the Mississippi River, celebrates the region as a port city and its unique access to a wide variety of ingredients.
 
The menus for each dinner will showcase five courses of dishes that are indigenous to New Orleans and each visiting chefs’ respective restaurants, modified by DeRosa’s signature whimsy and the fresh ingredients of South Florida.
