Acclaimed Chefs Jeff McInnis and Janine Booth Introduce The Sarsaparilla Club, an American Dim Sum Concept, at Shelborne Wyndham Grand


Renowned chefs Jeff McInnis and Janine Booth, who built their foundation while working together at Gigi, Yardbird Southern Table & Bar Miami, and more recently Root & Bone in New York are thrilled to be returning to South Florida with the launch of the unique and energizing concept The Sarsaparilla Club, located inside the iconic Shelborne Wyndham Grand hotel.  A street-side vintage VW bus will welcome diners to the whimsical and cozy indoor-outdoor poolside 130-seat restaurant. The Sarsaparilla Club, named by McInnis and Booth, pays homage to the unique attributes of the sarsaparilla root, which is used in a number of cultural cuisines (including Australian, Asian, and of course American). Following the success of Root & Bone in Manhattan, both McInnis and Booth wanted to stay consistent while searching for another name that fit within the Root & Bone family.
 
“Returning to Miami to open another new concept reminds us of riding a roller coaster; we’re excited, scared, and happy all at the same time,” says McInnis.  Set to become Miami’s innovative and original American Dim Sum restaurant, the famed Top Chef alums will create an atmosphere of freedom and flexibility -- a kitchen with no boundaries. “The Sarsaparilla Club concept is inspired by the infinite possibilities of the multicultural American table, offering a platform for both of us to experiment and create new takes on American classics, while paying respect to culture and traditions,” says Booth.
 
Elegantly encapsulating a blend of historical beauty with elements of raw hand crafted materials, The Sarsaparilla Club offers a dynamic dining and lounge space. Sticking to their familial roots, the design of The Sarsaparilla Club was crafted by McInnis’ brother’s architectural firm, SAI, who worked alongside Chefs Jeff and Janine each step of the way to fulfill their vision for the space. Timeless pieces have been hand selected by the family, cultivating a warm and comforting environment that promises to be the perfect setting to sip craft cocktails and enjoy the elaborate circulation of the Dim Sum service.
 
Merging the realms of American comfort food and Cantonese Dim Sum, The Sarsaparilla Club will showcase soul nurturing, conscientiously sourced, farm-fresh ingredients in two formats — traditional Dim Sum carts and an a la carte menu.  The dining experience will begin with a visit from the culinary team touting carts full of vibrant and irresistibly aromatic small plates including Beet & Short Rib Dumplings, House-Made Steamed Buns with Pork Belly Bacon and Local Root Tartare as well as signature handcrafted cocktails.  In addition, guests will be presented with a menu featuring medium and large dishes like Spiced Honey
 
Carrots & Farro Salad, Thai-influenced Sarsaparilla’s Green Curry Fried Chicken, and Rock Shrimp Laksa, plus sides, desserts and an extensive beverage list.
 
“The timing was right – we were looking for a concept that would be perfect for our hotel guests and locals, and Chefs McInnis and Booth were looking to return home. We couldn’t be happier to be part of their homecoming,” says Amaury Piedra, General Manager, Shelborne Wyndham Grand.
