Swine Southern Table and Bar, the award-winning southern eatery from the creator of southern sensations, Yardbird Southern Table and Bar and the fast casual concept, Spring Chicken, announce a unique guest chef residency with acclaimed chef, Ben Vaughn. Kicking off the holiday weekend, on July 5th and lasting through August 2016, Chef Vaughn’s sizzling summer takeover will introduce menu items that pay homage to his passion for southern cuisine, while still delivering delectable dishes that have made the restaurant a South Florida staple.

“I was lucky to meet Ben during the filming of one of his shows in Las Vegas and we immediately connected due to our Southern upbringings,” says John Kunkel, CEO and Founder of 50 Eggs, Inc. “We have been looking for a project to collaborate on for some time now, so I am thrilled to have him as part of our 50 Eggs team for the summer,” continues Kunkel.

Chef Vaughn is a best-selling author and Food Network host. His latest book, Southern Routes, chronicles his journey as he searches to discover the best dishes and restaurants from North Carolina to Texas. Chef Vaughn will be returning to television this summer with an upcoming show on the Travel Channel.

“I am passionate about southern cuisine and excited about incorporating my unique version of classic southern staples into the Swine menu,” say Chef Vaughn. “I look forward to creating new and inspiring dishes that will delight guests but still pay homage to the original roots and recipes,” says Vaughn.

During his two month takeover period, Chef Vaughn will be overhauling the Swine menu, while continuing to humbly honor the south by showcasing the best qualities of pork. The revamped menu, which will feature rotating dishes daily, will be inclusive of staples such as Line Caught Wood Grilled Grouper Cheeks, Celery Root Gnocchi with Vanilla Bean Buerre Blanc, Wood Fired Lamb T-bone with Carolina Gold Hoppin’ John, Heirloom Carrots and Melted Leeks and Smoked Pork Belly with Braised Mustard Greens, Delta Farms Rice Grits and Romesco Butter. Swine’s beverage program, boasting a wide selection of beers and an extensive whiskey and bourbon collection, will also feature a brand new cocktail program, curated by Juan Coronado of the famed Bar Mini in DC. The program will be rolling out in conjunction with the summer menu and include refreshing cocktails like Zona Rosa with Bacardi Superior, pineapple juice, lime juice, cinnamon syrup, muddled strawberry, angostura bitters and fresh mint and Kentucky Mule, made with Buffalo Trace, lime juice, angostura bitters, whiskey barrel bitters, Indi ginger beer and candied ginger.

Miami Finally Gets Its First Legit Mezcaleria
May 31

Miami Finally Gets Its First Legit Mezcaleria

When people think of South Beach, they think of overly tanned tourists, neon lights and the occasional cheesy DJ playing at a random club. In the middle of all of this flamboyance lays Clandestino, Miami’s first and only Mezcaleria, a dedicated mezcal bar focused on one of the oldest & finest Mexican spirits: agave based mezcal.

The bar’s name means secret, hidden, sometimes illegal, a Mexican speakeasy of sorts; and staying true to its roots, this hidden gem on Washington Avenue has become the laid back local’s bar that doubles as a music venue and art gallery. Since it’s opening, Clandestino has always been a work in progress. The owners, from Mexican origin Emanuel “Manu” González and David "El Cuervo" Alvarez, believe that change and experimenting with new ideas has allowed for Clandestino to evolve from a modest craft beer bar to becoming a Mezcaleria (mezcal bar). It now serves over 18 original mezcal craft cocktails recipes, named after Mexican pop icons like lucha libre wrestlers El Santo and famous artists like Frida.

“Our cocktail list is devoted to all things agave, showcasing the rare finds from our travels throughout southern Mexico,” said Emanuel González, co-owner of Clandestino. “We personally curate each and every mezcal that we serve and we’re proud to say that we’re the only true Mezcaleria in Miami and actually all of Florida. Other places carry a few mezcal options but don’t offer variety, or are not focused on providing an authentic Mexican experience.”

Mezcal is handcrafted, often from old family recipes, and complex in taste. It can be produced in several states of Mexico, such as Oaxaca, Guerrero, and Zacatecas. Unlike tequila, mezcal can be produced from over 30 different varieties of agave, and its trademark smoky flavor is captured by fire-roasting the agave hearts in pits dug into the ground before distillation. The craftsmanship of this artisanal production creates colorful flavors ranging from floral and fruity to hints of red pepper, coffee and chilies.

“Clandestino allows you to forget you're in South Beach, transporting you to a different place; a bizarre mix of a Mexico City cantina & Mezcaleria in Oaxaca,” said David “El Cuervo” Alvarez, coowner of Clandestino. “Our basic criteria to decide which mezcals make it to Clandestino’s shelves is that it has to be hand-made and produced in limited small batches.

From all the spirits in the world, mezcal is one of the few that can’t really be produced massively (without sacrificing flavor and quality) due to its complexity and the time needed for the agave plants to grow, in some cases it could even take 35 years.”

Recently Clandestino made some updates to their place, including a new back bar designed and built by Manu - inspired by traditional small town Mezcalerias in Oaxaca, Mexico - as well as a 45 x 12ft mural painted by Mexican graffiti artist Smithe. He has not only worked with artists like Pharrel, but has also painted in places like Mexico City, Barcelona, Berlin, NY and has now left his very first mark in Miami.

With their amazing Mezcal Margaritas and drink names like “Cabroni” and “The Bandido”, Clandestino guarantees mezcal flavors for every taste bud. Like the Mexican saying goes: “Para todo mal, mezcal, y para todo bien también”. This means “For everything bad, mezcal, and for everything good, the same.”

Bar hours: Sunday-Wednesday 8 p.m. – 4 a.m. & Thursday-Saturday 8 p.m. – 4 a.m. Address: 758 Washington Avenue, Miami Beach, FL 33139

Kicking off at 7 p.m. on April 9, Beard in Baldwin, a Friends of James Beard Benefit, aims to highlight Florida’s most talented chefs and restaurants in one of Orlando’s most affluent neighborhoods, Baldwin Park.

For $75 per ticket, guests will have the opportunity to delight in an outdoor foodie playground on the lake featuring gourmet fare, fine wines and spirits and live music by The Legendary JC’s. The food festival will be emceed by Orlando Sentinel food editor Heather McPherson. Of the more than 25 confirmed restaurants, Beard-nominated concepts, such as The Rusty Spoon, K Restaurant, Norman’s, and The Ravenous Pig will be in attendance, alongside local favorites including Seito, Highball & Harvest, Hawkers and Tapa Toro.

Elevating the experience is an indoor VIP celebration-- $150 per ticket-- that offers access to The Osprey Tavern, where guests can enjoy passed hors d’oeuvres prepared by Chef Burnett’s “chef friends” from around the state and craft cocktails by Osprey Tavern’s beverage director, Harrison Cremata. Top-billed talent to be sampled inside The Osprey Tavern include:

  • This year’s two-time James Beard nominated Brad Kilgore of Alter in Miami James Beard semifinalist
  • Timon Balloo of SUGARCANE raw bar grill in Miami
  • Ferrell Alvarez of Rooster & the Till in Tampa
  • Bravo TV’s “Best New Restaurant” semifinalist Cesar Zapata of The Federal Food, Drink & Provisions in Miami

Pastry Chef Kristy Carlucci will be partnering with Hichem Lahreche of Criollo Chocolatier in Orlando to create a unique dessert experience.

“Blending some of Florida’s best talent and raising funds for future leaders in the culinary industry was the inspiration behind Beard in Baldwin,” says Chef Burnett. “From chefs to local sponsors, each participant enables us to curate an evening that generates well-deserved attention to the Baldwin Park community and greater Orlando.”

Celebrate National Beer Day at Pisco y Nazca
4:00 pm16:00

Celebrate National Beer Day at Pisco y Nazca

The only thing better than an entire day dedicated to beer is a tasty dish to go perfectly with your beer selection. Pisco y Nazca’s skilled mixologist Joel Mesa has carefully curated the following food and beer pairings by selecting brews with flavors that complement the distinct Peruvian flavors found in four signature dishes:

1. Eat This: Passion Fruit Ceviche Drink This: Funky Buddha Floridian
Pairing Note from Mesa –
Where a Belgian style witbier would be a bit too acidic, the Funky Buddha Floridian shines. The banana and clove aromas in the beer complement the tropical tasting Passion Fruit Ceviche. Its palate-refreshing effervescence combined with the fresh flavors of passion fruit and fish could make anyone reminisce of paradise.

2. Eat This: Anticucho de Corazon Drink This: Wynwood Pops Porter
Pairing Note from Mesa –
Wynwood Pops Porter is the perfect beer for grilled meats. It has the ability to challenge the delightful sauces brushed onto the beef while leaving its own roasted, deep-caramel mark on your palate. A dish as rich and juicy as the Anticucho de Corazon requires an equally rich and intense beer to meet the mark and Wynwood Pops Porter does that perfectly.

3. Eat This: Chaufa Drink This: Fat Tire Amber Ale
Pairing Note from Mesa –
Fat Tire Amber Ale is an amber ale ideal for the Chaufa.  Its malt flavors and hints of caramel create a synergy between the ale and the soy sauce, savory rice and vegetables in the dish. Adding tenderloin to the Chaufa only strengthens this combination making it all the more ideal and interesting.

4. Eat This: Choros Marineros Drink This: Ommegang Witte
Pairing Note from Mesa –
Ommeganag Witte is a thirst-quenching beer that matches the intensity of the Choros Marineros perfectly without overshadowing any flavors. The prominence of the Aji Amarillo contributes a unique Peruvian flavor and separates the Choros Marineros from most mussels’ dishes. Its slight spice requires a refreshingly and satisfyingly acidic beer like Ommegang Witte to cut through the heat.

Mondrian South Beach Launches Hurao Pop-Up Restaurant

Mondrian South Beach Launches Hurao Pop-Up Restaurant

On the heels of a successful pop-up collaboration with Brooklyn-based Momo Sushi Shack, Mondrian South Beach is launching a new pop-up restaurant inspired by Executive Chef Dustin Atoigue’s heritage. Hurao (pronounced (hOO-rO), is named for one of the most celebrated Chamorro chiefs in Guam’s history, and means “emotion, caring, attention and heed,” values Atoigue strives to bring to the table. The concept is slated to open early March 2016.

Atoigue’s menu will celebrate Guam’s cuisine with tropical fruits, fresh seafood and contemporary takes on traditional staples. Highlights include Grilled Achiote Glazed Ribs with Pineapple Salsa; Whole Steamed Snapper with cilantro pesto and lemon-caper brown butter sauce and Island Style Roast Pig Shank with papaya sour sauce and lemongrass essence. As Guam is a variable melting pot, guests will notice American and Japanese influences in items including the Mini Maine Lobster Rolls and Spicy Karaage Chicken Lollipops. The beverage program will also reflect Atoigue’s Chamorro background with tropical influence.

“I’m thrilled to celebrate my heritage and bring Guam’s food to Miami,” said Atoigue. “To my knowledge there is not a single Chamorro restaurant on the east coast. Friends and family back home are really supportive and excited that I’m sharing our culture with a broader audience.”

Mondrian is transforming the restaurant space with bursts of watercolor and tropical foliage. Guests will have the option of dining in Hurao’s interior space or on the terrace, both with extraordinary bayside views of the Miami skyline, for which Mondrian is so well known.

Hurao will be open at Mondrian from March through June and will be open for dinner seven days a week. Valet parking is available.

Mondrian South Beach is located at 1100 West Ave., Miami Beach, FL 33139.
